Ann’s Cuisine: Homemade Chicken Shake And Bake Coating Mix

It’s not always possible to run to the store to buy something when we need it. This is a quick and easy shake and bake coating mix for chicken or pork chops. There are no additives or preservatives or hidden salts. You know what you are putting in your food.

This smells so divine while cooking, put on the fan to send some of the smell outside and I’ll tell you, you’ll get comments from your family on how good it smells. The chicken comes out so tender it’s fall off the bone good. It’s finger licking good, smack your lips for more, wipe the drool off your mouth kind of chicken. Serve this with creamy homestyle mashed potatoes for a complete dinner.

3/4 C italian bread crumbs
2-1/4 C soda crackers
1/3 C vegetable oil
1 tbsp paprika
1 tbsp celery salt
1 tsp black pepper
1/2 tsp garlic salt or power
1/4 tsp onion salt or powder
1 pinch dried basil
1 pinch dried parsley
1 pinch dried oregano

Combine everything in a sealable container and shake to mix. Because of the oil, you may want to use your fingers to make sure everything is well mixed without clumps. Pour some on a plate, coat your pieces of chicken and pop chicken in oven.

This mix is good for 4 large chicken legs with thighs attached. Try this recipe once and if you like it, then double everything. Store it in an air tight container in the refrigerator for next time because there will be a next time.
